Micro-greens are an older sibling to sprouts. They take between 7-25 days to grow depending on the variety you choose. Unlike sprouts, they develop their first juvenile green leaves and are grown in a seed raising medium. In an American study, the University of Maryland College of Agriculture and Natural Resources, joined forces with the United States Dept. of Agriculture to produce some very convincing statistics about the nutrient content of some varieties of micro-greens . They examined nutrients such as Vitamin C, E, K and beta carotene found in 25 different types of micro-greens including cilantro, broccoli, red cabbage, radish, green basil and rocket to name a few. They were surprised to say the least, when they discovered how incredibly nutrient rich micro-greens proved to be - from 4 to 40 times the levels of antioxidants than their mature counterparts. Such members are: Broccoli, red cabbage, radish, rocket, red mustard and red russian kale. One thing is for sure however, adding micro-greens daily to your meals either fresh or dried could be the easiest habit you could adopt, to help prevent disease. Why is it easy? Their taste and texture is so complementary to just about any meal! (Maybe not dessert :)) Although in saying that, broccoli microgreens do not have a strong flavour and can easily be added to a sweet smoothie without a negative savoury taste. How good is that!
